4 large tomatoes, chopped
1 onion, chopped
1/2 cup chopped fresh cilantro
3 cloves garlic, minced
1 tablespoon lime juice
1 tomatillo, diced (optional)
salt to taste
1 jalapeno pepper, minced
In a medium-size mixing bowl, combine tomatoes, onion, cilantro, garlic, lime juice, tomatillo, and salt to taste. Mix well. Add 1/2 of the jalapeno pepper, and taste. If you desire your salsa with more of a kick, add the remaining 1/2 jalapeno. If you are satisfied with the salsa’s heat, do not add the remaining jalapeno pepper. Cover the salsa, and chill until ready to serve.
I love bread and whenever I can find something amazing to top it off, man, I’m in trouble. This Raspberry Butter makes everything taste better.
1 stick (1/4 lb) unsalted butter, room temperature
1/4 c raspberry preserves
2 Tbsp powdered sugar
- Place in mixer and beat until combined.
- Return butter to refrigerator and wait until set.
Vegetables can be a hard food group to fee my kids but with these delicious Roasted Carrots it’s a breeze!
1 package of baby carrot
1/2 tbsp olive oil
Mrs. Dash seasoning
2 tbsp olive oil
3 tbsp honey
1 tsp balsamic vinegar
- Drizzle carrots with the 1/2 tbsp olive oil and season.
- Roast carrots for 20 minutes in oven at 400 degrees.
- Take out of oven and drizzle with remaining olive oil, honey and balsamic vinegar.
- Return to oven for 5 more minutes.
My niece’s mother-in-law made this dip and it is exactly what the name says, Dip To Die For! I made it for the Super Bowl party we went to and everybody loved it. You have to give it a try.
1/2 cup cilantro
3 green onions
1 can white corn
1 can black beans
1 envelope Good Seasons Italian DressingTortilla Chips
Optional: chopped red, yellow or orange peppers
Finely chop cilantro and green onions. Cut avocados into small chunks. Dice tomatoes. Drain corn and beans (rinse beans well). Prepare dressing according to directions on package but add 1 tbsp sugar. Add a little more of any ingredient you especially like. Omit anything you don’t care for. Put all ingredients into a bowl and dress. Serve with tortilla chips.
